This vegan falafel wrap makes for a delicious meatless option that’s especially perfect if you’re looking to switch it up and incorporate more plant-based meals into your menu.

Filled with nutritious ingredients like beets, carrots, avocado, baby spinach, hummus and falafel, this vibrant wrap makes the ultimate nutrient-packed lunch or dinner. With all those colours, it looks just like a rainbow!

These vegan wraps were originally inspired by the best falafel wrap EVER that I tried at a local vegan cafe. The best part is, it can easily be made at home with a few simple ingredients and it’s perfect for taking on the go!

For the purpose of this recipe, I used these homemadefalafel bites, which are simple to prepare and can be made in advance for a quick meal that you can assemble in a flash, but you can also use leftover falafels that you might have kicking around in your fridge too!

  • Tortillas: I typically use large whole grain tortillas for higher fibre content. You can also sub in regular flour tortillas or gluten-free if preferred.
  • Falafels: Provides that delicious Mediterranean flavour to these wraps. Use this homemade falafel recipe or your favourite falafel recipe to make these wraps. You can also use store-bought if you’re short on time.
  • Hummus: Acts as a glue to secure all of the ingredients in the wrap and provides some extra flavour. Use a homemade hummus (try this Sweet Potato Hummus) or store-bought for a quick and easy option.
  • Beets: Adds a vibrant burst of colour. Shred the raw beets up before adding them to the wrap. You may wish to wear kitchen gloves when shredding the beets to prevent them from staining your hands.
  • Carrots: Adds a refreshing crunch to the wrap. Shred large carrots or purchase matchstick carrots for a more convenient option.
  • Avocado: Incorporates healthy fats and a delicious creaminess. Use ripe avocados that have not yet browned for the best taste and presentation.

Step by step instructions

There are a few steps involved in making these wraps, but the good news is that there are several things that you can do in advance to help simplify the process, including making the hummus and falafels ahead of time.

You can also use store-bought if desired to speed up the process even more.

  1. To start, spread a thin layer of hummus all over a largetortillaleaving about an inch around the edge, to add some flavour and act as a glue to keep all of the ingredients in place.

2. Next, place on the toppings for the falafel wrap. Line each of the ingredients in equal strips across the wrap.

  • Baby spinach
  • Sliced avocado
  • Shredded beets
  • Shredded carrot
  • Crumbled falafel

3. Next, carefully and tightly roll up the wrap, tucking in the ends and securing it with two toothpicks to prevent the contents from falling out.

I’ve tried several different types of hummus with these wraps, both homemade and store-bought, and each time, they turned out equally delicious. In terms of flavour, you can use regular hummus or try a flavoured hummus like this Spicy Garlic Hummus or Sweet Potato Hummus!

Not all falafel wraps are vegan, but this recipe is a plant-based option since it’s meat-free, dairy-free and egg-free.

How to fold a wrap

Be sure to roll up the wraps tightly starting from the side with the crumbled falafels to ensure that the falafels stay in the centre of the wrap and don’t come out the other end. When rolling up the wraps, tuck the tortilla in on each side to prevent the fillings from falling out. To help keep the wraps together, you can place two toothpicks through the tortilla and fillings when cutting in half.

There are a number of different fillings you can use in a falafel wrap. In this particular wrap, we’ve used hummus, shredded beets, carrots, avocado and spinach in addition to the falafel. If you want to switch it up, you could do tzatziki, lettuce, tomatoes, feta, and cucumbers or come up with your own unique spin!

Can falafel wraps be frozen?

While the falafels themselves can be frozen, I don’t recommend freezing the wraps once they’re assembled as they won’t taste as good once thawed. To save time, freeze the falafels in advance and then thaw when ready to make and serve these wraps.

These avocado falafel wraps make a balanced and satisfied meal on their own, but you can also serve them up with your favourite sides!

Ingredients

  • 4 large 10-inch whole-wheat tortillas (can use gluten-free if desired)
  • 1/2 cup hummus (store-bought or homemade)
  • Large handful baby spinach
  • 1/2 large avocado thinly sliced
  • 1 cup shredded beets
  • 1 cup shredded carrot (about 1 large carrot)
  • 8 falafels crumbled
  • 8 toothpicks

Instructions

  • Spread the hummus evenly across each of the four tortillas, leaving about an inch around the edge.

  • Starting from the left side of each tortilla, add a strip of baby spinach, sliced avocado, shredded beets, shredded carrot and two crumbled falafels.

  • Roll the wrap tightly, tucking in the ingredients as you go to ensure that all of the ingredients stay in the tortilla.

  • Secure with toothpicks and slice wrap in half. Serve and enjoy!
