Last night, this recipe for Cinnamon Roll Pancakes popped up on my Facebook news feed. I immediately shared it to my Facebook Page: My Epicurean Adventures. The very next morning, I HAD to make them. I had no choice! The original Facebook post from Texas Recipes is no longer available, but it lives strong in my memory. The picture was sinful and my mouth watered instantly. Apparently, everything IS bigger in Texas because the amounts in this recipe were just ridiculous. They must have been cooking for the entire Ewing clan!
Here are my Cinnamon Roll Pancakes. They may not be as awe-inspiring as the original, but, boy, were they OMG crazy delicious! They tasted just like cinnamon rolls in pancake form. Whoa.
As-is, they’re delicious, but I had to add my own little twist to make it a wee bit healthier. The original recipe is below (with adjusted amounts) since it’s no longer available online. My tweaks are listed as “optional”. But with all that sugar glaze on top, the girls have no complaint about the added bits of goodness. This also happens to be my favorite “plain” pancake recipe. I’ve tried countless others, but this one is so simple and so delicious, every time.
Cinnamon Roll Pancakes

Ingredients
Pancakes:
- 1cupsall-purpose flourI used 1/4 whole wheat flour and 3/4 cup all-purpose flour
- 2-3tspsbaking powder
- 1/2tsp.salt
- 1Tbspground flax seed(optional)
- 1Tbspwheat germ(optional)
- 1-2Tbspprotein powder(optional)
- 1cupmilk(or more for desired consistency)
- 1tbspvegetable oil
- 1large egglightly beaten
Cinnamon Filling:
- 1/4cupbuttermelted
- 1/3cupbrown sugarpacked
- 1/2tbspground cinnamon
Glaze:
- 1/3cuppowdered sugar
- 1Tbspmilk
- 1/4tspvanilla
- 1/2Tbspmelted butter
Instructions
Cinnamon Filling:
Mix together melted butter, brown sugar and cinnamon in small bowl.
To dispense the filling, fill either a ziplock bag with a tiny piece of the corner cut out or a squirt bottle with the cinnamon filling.
The filling will most likely start out pretty drippy, so place on a small plate when not in use. It will then slowly thicken, to the point where it won't easily flow from your tip. So finicky! Simply place under warm water for a short time to melt it down a little again.
To make the Glaze:
In a microwave safe bowl melt the butter. Whisk in the powdered sugar and vanilla. Add a little milk if needed to make it a glaze consistency. Drizzle with spoon or place in a 2nd squirt bottle.
To make the Pancakes:
Mix the dry ingredients in one bowl and the wet ingredients in another bowl. Stir them together until everything is moistened leaving a few lumps.
Heat pan on med-low heat. You don't want these to cook too quickly and you won't want your cinnamon to burn.
Make desired size pancake on greased griddle. Quickly, starting at the center of the pancake, create a cinnamon swirl.
Wait until the pancake has lots of bubbles in it before you flip it. You'll find that when the pancakes are done, the cinnamon swirl will melt. This creates craters which the glaze will fill. Take care not to burn cinnamon.
Place cooked pancakes on place, cinnamon side up. Drizzle with glaze and enjoy!
Recipe Notes
Place pancake on plate, then cover with glaze and say mmmmmmmmmmmmmmm.
Makes about a dozen medium sized pancakes, perfect for this family of 4.

This morning, the girls got this breakfast. Below, eggs and apples rounded out the dessert-like pancakes.
Update 6/02/2013: Here’s another picture from this morning’s batch, my messiest endeavor yet. The original recipe called for a piping bag to squirt out the cinnamon. However, DO NOT USE A PIPING BAG! Mine was too small, kept jamming up, oozed out the back and MADE A MESS!! Luckily, the end result was just as yummy. Instead, use a ziplock bag (and zip it!) or squirt bottle like I suggest in the recipe. It’s much neater. And, don’t forget to warm the bottle up under warm water if it gets jammed up. You can do it!
