Last week I talked about all the spring time fun our family was having. One of which was making this amazing strawberry jam. The jam cooks all day, and makes your house smell heavenly. It was such a simple recipe to follow. I placed it into the oven, and beside coming back to it to stir occasionally, therewasn’tmuch to it.
I found this Oven Strawberry Jam recipe in a book called Small- Batch Preserving. which has become I little treasure in our cookbook collection. The idea of making small batch as a beginner at canning/ preserving is some what freeing. Because if I mess up or don’t like something about it, I don’t have 20 jars to figure out what to do with.
Ingredients:
- 8 cups halved or quartered strawberries
- 4 cups granulated sugar
- 1/4 cup lemon juice
Instructions:
- Combine strawberries and sugar, add to a large saucepan. Let sit for 2 hours, stirring several times.
- Add lemon juice and bring to a boil over high heat. Reduce the heat and boil gently for about 10 minutes.
- Pour into 2 (13 x 9-inch) glass baking dishes and place in oven at 150 degrees. Stir occasionally. Let cook for 10 hours, or until mixture thickens to a gel consistency.
- Ladle into sterilized jars and process as desired.

This jam recipe require you leave about an 1/2 in head space when canning.

This looks really good, Brenna! My husband and son love strawberry jam. I never wanted to make a ton of it either, that’s why I never tried. Plus the whole water bath thing makes me nervous. Is it easy to do? Does it take any special equipment?

No, it really doesn’t. We bought out Our Water Bath Canner at Walmart (but, a big pot would work just the same) for around $18 I think, and it came with the basket to lift the jars out. Besides a big pot the only other thing you should have is a funnel. It really is easy. I was very nervous at first too. If you decide not to can it, you could always freeze it.

I love strawberry jam and made some earlier this week. It set way too hard this time (despite doing it the SAME WAY!) so now it’s more like fruit leather. Anywho, I have more berries and I’m glad to have this recipe instead–i’ll just pop it into the freezer afterward so I don’t have to bother with processing.

I LOVE canning. I have a lot of recipes for it and my 2 favorite books are my Ball books. My favorites in the past year were cherry Amaretto jam, vegetable salsa, and spice honey. I enjoy canning because I make everything in the summer then enjoy fresh fruits, spreads, salsa, etc. all year round. This jam looks yummy!

Heather, I hope to one day be able to can all those things. I love the idea of putting stuff up in the summer. I saw that you have a canning page on your blog, I will have to check it out.

I love this! I am definitely going to try it. But I was wondering if I could use this same recipe, but in place of the strawberries use blueberries? My husband isn’t a strawberry fan so I’d like to make something that he’d actually eat instead of just me!

I’m am not expert on this by any means, but I think that blueberries would need pectin added to the recipe. If you try it, please let me know how it goes. I would love to do a blueberry jam. My husband doesn’t really eat it either. That’s why I’m glad it only makes 4 little jars. I can finish that in a year.
