I have to say that if you plan on having some leftovers of these No Bake Thin Mint Cookie Truffles, then you should plan on quadrupling the recipe.

Honestly, this is one of my favorite recipes using thin mint cookies. I make them up and bring them to a party and they are the first thing gone! Obviously, I am happy everyone loves them but sad I never have any to indulge with at home.

Ingredients needed for these Mint Cookie Truffles Recipe:

  • 9ouncesGirl Scout Thin Mint Cookies1 package, (or Keebler Grasshopper cookies)
  • 4ouncescream cheesesoftened
  • 12ouncesGuittard’s Green Mint Chips1 bag, (I just found these at the grocery store)*

HOW TO MAKE THIN MINT COOKIE TRUFFLES:

To begin, use a food processor to crumble up the cookies (or a ziplock bag pounding them instead) until they are in little crumbs. You might need to divide the package in half and do two batches to get them all chopped up.

Then, you are going to add the thin mint cookie crumbs and softened cream cheese into the large mixing bowl and blend them together until they are well mixed and all the crumbs come together.

With the cookie and cream cheese mixture, roll little balls that are about 1 inch and place them on a baking sheet lined with wax paper. Do this until all of the dough has been used.

Then, place the baking sheet in the fridge for about 30 minutes so they harden up a little bit. This make them easier to dip in the chocolate and not fall apart.

Once the truffles have been in the fridge for the 30 minutes, begin melting the green mint chips in a microwave-safe bowl. You will heat the chips up in the microwave for 30-second increments. Be sure to stir between each session. Keep doing this until all of the chips are melted and are smooth.

After the green mint chips are melted and ready, roll each of the mint cookie balls in the melted chips until the ball is fully coated.

Then, using two forks, lift the truffle up carefully and hold it there for a minute allowing the excess mint chocolate to drip off before placing the ball back onto the wax paper. You will continue to do this step until all of the truffles are coated.

Now, stick the mint truffles back in the fridge for a couple of minutes or until the chocolate coating has hardened.

If you are interested in decorating the cookies as I did, you will need to melt about a ½ cup of white chocolate chips (or whatever flavor you prefer) the same way you did the green mint chips. Then pour the white chocolate into a small ziplock bag and cut a small corner of the bag.

Using the bag drizzle the white chocolate over the top of the green chocolate coating. You could also put some fun sprinkles or cookie crumbles on top as well!

Then simply return them to the fridge to harden back up.

These will do well in an airtight container in your fridge for 2-3 days so they are ready for your event when you need them (if they last that long).

No Bake Thin Mint Cookie Truffles Recipe

Ingredients

  • 9 ounces Girl Scout Thin Mint Cookies 1 package, (or Keebler Grasshopper cookies)
  • 4 ounces cream cheese softened
  • 12 ounces Guittard's Green Mint Chips 1 bag, (I just found these at the grocery store)*

Instructions

  • Blend cookies in a blender or food processor until fine crumbs form. Set aside 1/4 cup crumbs to sprinkle on top of truffles, if desired.

  • Place cookie crumbs and softened cream cheese in a large mixing bowl and mix until well combined.

  • Roll mixture into 1-inch sized balls and place on a baking sheet lined with parchment or wax paper.

  • Place baking sheet in the fridge for 30 minutes.

  • Melt mint chips (or white chocolate chips) in a microwave-safe bowl in the microwave in 30-second increments, stirring each time, until melted (about 2 minutes).

  • Add food coloring to melted white chocolate chips if using white chocolate.

  • Dip each ball into melted chocolate until completely covered using two forks. Lift ball out of the chocolate and scrape off excess chocolate before placing on baking sheet.

  • Sprinkle on cookie crumbs for garnish, if desired.

  • Place truffles in the fridge for a few minutes to set up.

Notes

  • If you can’t find Girl Scout Cookies you can use Keebler Grasshopper Cookies.

    Found this on Pinterest today and I just made them, so easy and really awesome! I used a bag of mint and dark chocolate chips I got on clearance a couple weeks back so the only thing I needed was some cookies.     If you want the green color while using actual chocolate instead of palm-oil-filled goop, you can get chocolate-soluble dyes from Chef Rubber and specialty chocolatier vendors. Don't confuse guittard coverture (which must be tempered, but tastes much better) with the chips or "apeels."
