Since May is Celiac Awareness Month, I thought it would be the perfect time to share our favorite gluten-free waffle and pancake topping we like to serve with our Van’s® Gluten-Free Waffles. Easy Caramel Banana Sauce

This Caramel Banana Sauce is absolutely incredible on waffles!

Sweet, caramel-y, and oh-so-delicious. The sliced bananas and toasted walnuts really puts this amazing sauce recipe over the top. It’s also delicious with ice cream, yogurt, and even cheesecake!

Ingredients Needed:

  • Brown sugar
  • Half-and-half
  • Butter
  • Banana
  • walnuts
  • salt

How to Make the Banana Caramel Sauce:

I’ve experimented with this recipe a little bit and have discovered the best way to make the caramel banana topping is to make a quick caramel sauce on the stovetop and then add the bananas. (I found cooking the bananas too long will make the bananas mushy – and no one likes a mushy banana!)

When choosing a banana to use, I recommend using a firm and not super ripe banana.

Making the sauce really only takes a few minutes over the stove. It’s as easy as melting the butter, sugar and milk together.

  • The main thing to keep in mind is that you’ll need to stir the sugar mixture (over low heat) almost constantly so the sugar does not burn.
  • You then add the sliced bananas and walnuts and cook for another minute, just so the bananas are warm and coated with the caramel sauce.
  • An additional, but highly recommended optional step is to toast the walnuts. This step only takes a few extra minutes, but makes a huge difference in the end result. Toasting your walnuts will bring out the flavor and crunchiness of the nuts.
  • To toast the nuts, add a handful of walnuts to a preheated skillet over med-high heat. Let the nuts toast for about a minute and then flip to the other side. The nuts will turn a few shades darker and smell delicious.

Can I make this Banana Caramel Sauce ahead of time?

Warm bananas will become mushy quite quickly, so this is not a recipe that I recommend cooking ahead of time. However, the caramel sauce stores in the fridge perfectly for quite a while. You could make a double or triple batch of the caramel sauce (so many uses for this stuff) and then reheat it over the stovetop, adding in the bananas and walnuts at the last minute.

How long will this caramel banana sauce last in the fridge?

The sauce with the bananas added in will not last long due to the bananas. I recommend making this in small batches (It only takes a few minutes) that can be finished in one sitting. However, you could make the caramel sauce in large batches as mentioned above.The caramel sauce will last two weeks, tightly covered in the fridge.

Ingredients

  • 8 to 10 Gluten-Free Van’s Waffles
  • 1/4 cup packed brown sugar
  • 1 tablespoon half-and-half
  • 2 tablespoons butter
  • tiny pinch salt
  • 1 banana, sliced into 1/4 inch thick pieces
  • optional: toasted walnut pieces
  • optional: whipped cream

Instructions

  1. Mix the brown sugar, half-and-half, butter and salt in a saucepan over low heat.
  2. Cook while stirring gently until the sugar melts. (just a couple of minutes) Cook another minute, stirring constantly.
  3. Add bananas and optional walnuts another minute to thicken further.
  4. Turn off the heat, cool slightly and pour into bowl.

Notes

Tips:

  • Make sure to heat the sugar mixture over low and stir constantly.
  • Bananas should not be too ripe to keep them from becoming mushy.
