I have a confession to make, I am terrible at making scones. It just seems like I’m not cut out to be a great scone maker! I have a few recipes to try so must attempt those as they claim they are no fail which seems like my sort of scone recipe.

However I do love scones, especially with jam and cream, but also cheese scones & cinnamon pinwheels, but in the past in order to make them I have used the cheats version in a bag from the supermarket!

But I figured that now was the time to try out this recipe I had been given, they claimed it had never failed yet so it sounded like my sort of recipe, and since I had only half an hour to get them made they needed to be not only no fail but quick, easy and delicious!

So I am delighted to let you know that not only were they quick but they tasted great! In typical fashion for me I altered them a little, I decided once they were cooked that a glaze would be a nice addition and I think it added the right amount of moisture to make them even more delicious.

You can of course leave the glaze out, but it literally took 1 minute to make!

The ingredients are simple all you need is

  • Plain Flour

  • Baking Powder

  • Salt

  • Sugar

  • Butter

  • Milk

  • Brown Sugar

  • Cinnamon

  • Icing Sugar

  • Vanilla

  • Water

The method is broken down into three parts, prepare the scone dough, roll out and prepare the filling then once baked the glaze.

To create the dough you need to rub the butter into the flour mixture, this is simple but takes a little time.

Once the butter is completely incorporated into the flour mixture you can then add milk and bring together lightly to form a dough. This is then rolled out to some sort of rectangular shape.

There are a couple of different ways to make the butter, brown sugar, cinnamon centre, I like to melt mine all together but I know some people spread the melted butter on then sprinkle over the brown sugar mix, either is fine, but this way its quick and easy and slightly less messy.

Then bake the pinwheels until they are lightly golden brown and sound hollow when tapped. Then prepare the simple vanilla glaze if using. You can be heavy handed or light with this one depending on what you prefer.

Cook Time: 15 minutes

Total Time: 25 minutes

Delicious pinwheel scones filled with cinnamon sugar and a lovely vanilla glaze

Ingredients

  • 2 Cups Plain Flour, 280 grams
  • 4 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 2 Tablespoons Sugar
  • 60g Butter
  • 3/4 Cup of Milk, 185 mls

Filling

  • 70-g Butter - Melted
  • 1/3 Cup Brown Sugar - Packed, 65 grams
  • 1 Tablespoon Cinnamon

Glaze Optional

  • 1 Cup Icing Sugar, 140 grams
  • 1/2 teaspoon Vanilla
  • 1-3 Tablespoons Water

Instructions

  1. Preheat Oven to 200C Bake
  2. Line a Roasting Dish or Baking Tray with cooking spray and baking paper and set aside
  3. Sift flour, baking powder, salt and sugar into a medium bowl.
  4. Add cold butter – cut into smallish pieces.
  5. Using your fingers rub the butter into the flour mixture until it resembles coarse breadcrumbs and no large bits of butter are there.
  6. Add the milk. It should be soft and sticky, if a little dry looking add a little extra, stir in quickly, but be careful not to overstir (some say use a knife to "cut" in the milk)
  7. Tip the dough onto a floured board or bench. Knead and fold 8 – 10 times, sprinkling flour as required.
  8. Then roll out to a square about 30 x 30cm (12in)
  9. ~~Filling~~
  10. Melt butter in a small bowl
  11. Add to this the brown sugar and cinnamon and mix well. Using a pastry brush or knife spread the butter & sugar mixture over the dough, leaving a small edge all the way around.(alternatively brush the butter and add the combined sugar & cinnamon to it dry)
  12. Roll carefully and tightly, and seal the edge with a little of the left over mixture.
  13. Using a sharp knife slice the pinwheels between 1-2 cm thick and place in the prepared dish.
  14. Bake for 10-15 minutes until golden brown and remove from the oven
  15. While Cooking Prepare the Glaze
  16. ~~Glaze~~
  17. In a medium bowl, add the sifted icing sugar and vanilla
  18. Add water a small amount at a time stirring well until you have a smooth but drizzle-able consistency
  19. Once the scones are removed from the oven, using a dessert spoon drizzle the glaze over the pinwheels back and forward until you have evenly covered them.
  20. Serve still slightly warm
