Prepare ingredients.

Blend acai packet, banana, 1 cup of coconut milk, and ¼ cup of mixed berries in blender.

Layer chia pudding and acai mixture in small bowl. Top with frozen berries. Enjoy!

Ingredients

  • 3 cups coconut milk
  • 1 Tbs. pure maple syrup
  • 1/2 tsp vanilla extract
  • 1/4 cup chia seeds
  • 1 Acai packet
  • 1 frozen banana

Instructions

  • Combine coconut milk, maple syrup, vanilla, and chia seeds.

  • Mix together until combined then refrigerate for at least 4 hours.

  • Blend acai packet, banana, 1 cup of coconut milk, and ¼ cup of mixed berries in blender.

  • Layer chia pudding and acai mixture in small bowl. Top with frozen berries. Enjoy!

    How much coconut milk do we add to the child seeds? I see 3 cups listed in the recipe. One c is used with the acai, so 2 cups? Just wanted to make sure.

      Whenever I make chia seed pudding I put about 2 tablespoons per 1 cup of coconut milk. So, 2 cups of milk to 1/4 cup of chia seeds sounds about right.

      Hi Beauty! This will make 2-3 servings. I prefer to use maple syrup or even coconut nectar instead of stevia because stevia is a relatively new product without much research around it yet. Maple syrup is a natural, minimally-processed sweetener that is also loaded with minerals and even has health benefits! Let me know how the recipe turns out for you ;) xx

      Hi Jacqui – thanks for your question. You can find acai at your local market in the freezer section, as well as Trader Joe’s and Whole Foods markets. I’ve found that if your market doesn’t carry it, you can ask them to carry it and they generally will bring the product into their store. I like to use Sambazon Acai packets.     Glad to be back! I read somewhere, people suffering from tinnitus should stay away from tomatoes, cinnamon, peanut, almond, cranberry since they contain phtalates which increase the tinnitus pitch. Need your feedback on that subject. Have a sweet day!
